Xmas recipe.
Amaretti – (Chocolate Almond Cookies)
This is a very simple recipe for Christmas – it can be made well in advance and stores well. It’s also gluten free and has no butter.

Ingredients
250 gms. Almond Flour
2 tbsp. Cocoa Powder
150 gms. Sugar
2 egg whites
½ tsp. Almond Essence
Powdered Sugar for coating.
Method
1. Mix the sugar and egg whites on a baine marie (double boiler) for 2-3 minutes on very slow flame – till sugar melts. Do not overheat or boil.
2. Remove from flame, stir well and whisk till its fluffy and forms soft peaks .
3. Add essence, give a whisk and very gently fold in the almond flour and cocoa powder with spatula and make a dough.
4. Wrap in cling film and refrigerate for 2-3 hours.
5. Then shape into round balls each 20-25 gms.
6. Roll in powdered sugar.
7. Place on a tray lined with butter paper. Press lightly on top.
8. Bake in a hot oven 180`C for 25-30 minutes.
9. Cool and store. (N.B.- Oven temperatures may vary slightly depending on oven-so baking time may vary by few minutes more/less)
