Trying out the new menu at Fire & Ice, Raffles, Dubai’s
A major inspiration for Raffles Dubai’s signature restaurant Fire & Ice – Raffles Cellar & Grill and the reason behind the new menu, revolving around the four elements of life: Fire, Water, Earth and Air, one of the core themes to Raffles Dubai’s designs.
The culinary team of Fire & Ice, led by award-winning Chef Cedric Darthial, has come up with a series of innovative menus, promising to tantalize all the senses and create an experience above the ordinary. Fire & Ice offers a modern European cuisine with colorful presentations, delicate textures and exquisite flavors.
As we entered the restaurant, we had an ambiance of dark wood, candles lit, and Café del Mar playing in the back ground.
We were greeted by Nicolas´ Murcott, who is the award-winning head Sommelier. The service was above 5 stars; every waiter was professional and happy to explain every dish carefully, so that we understood what we were eating and tasting.
The six of us chose to experience Fire & Air which offers a modern European cuisine with colourful presentations, delicate textures and exquisite flavours. Their signature dishes were cooked in a unique way. “Nitro Wagyu Beef” (Fire) which we all thought to be raw meat was cooked under Nitrogen; the meat was so tender, it melted in your mouth.
Each meal was served with a different glass of wine, experiencing the taste from France, Austria, South Africa and Tuscany Italy. ‘Foi Gras Tower (Air) Candy Pops – Pear Ginger Chutney, beetroot black pepper ‘espuma, all of these were presented with colour and taste – something we had not experienced before.
Every dish came out with flare, excitement, colour and imagination all of which were prepared by the magnificent chef, Cedric Darthial, whose ideas were to excite your taste buds.
This had been the best experience I have had in any five star restaurant. It offers the best from both The Old and The New World, with a glass of wine perfectly accompanying your meal while you explore all of the four elements, Earth, Wind, Fire and Air!
